Ingredients
- 150gr good dark chocolate, (70%)
- Zest of 2 oranges
- 50gr Amaretti biscuits
- 1 tsp Vanilla Extract
- 100g unsalted butter cut into cubes (room temperature)
- 100gr flaked almonds
- 4 eggs, beaten
- 175gr caster sugar
- Cocoa powder or icing sugar for dusting
Instructions
- Preheat the oven to 180 degrees c. Line the base of a 20cm (8in) diameter spring-form tin with greaseproof paper and butter the sides of the tin.
- Melt the chocolate slowly.
- Place the Amaretti biscuits, flaked almonds, sugar, vanilla extract and orange zest in a food processor and blend until the biscuits and almonds are smooth.
- Add the butter and the eggs and blend again. Then add the melted chocolate and briefly mix again until blended.
- Pour the mixture into the prepare tin and put straight into the oven. Cook for 35-40 minutes until the cake has risen and slightly cracked around the edges.
- Remove and allow to sit for 20 minutes before transferring to a plate.
- When it is cool, dust with cocoa powder or icing sugar and serve with fresh strawberries and cream
